Ingredients:
  • 800g pumpkin
  • 14.40 gm honey
  • 18.20 gm olive oil
  • 189.38 gm thickened cream
  • 800g pork leg steaks
  • 46.80 gm wholegrain mustard
  • 60g butter
  • 1 leek, trimmed, halved lengthways, cut into ribbons
Instructions:
  • Preheat your oven to 200°C and line a baking tray with parchment paper. Place the pumpkin on the tray and drizzle with honey and oil. Bake for 45 minutes until golden. Transfer the cooked pumpkin to a bowl and add 1/2 cup of cream. Roughly mash the pumpkin using a potato masher, then season with salt and pepper. Cover and set aside.
  • Cut steaks in half, then generously coat both sides with mustard and season with salt and pepper. In a large non-stick frying pan, melt half of the butter over medium-high heat. Sear steaks for 2 minutes per side until beautifully browned. Pour in the remaining cream, lower the heat to simmer for 2-3 minutes until the sauce slightly thickens and the steaks are cooked through. Remove from heat and serve.
  • In a frying pan over medium-high heat, melt the remaining butter. Add the leek and cook, stirring, for 3 to 4 minutes until tender. Serve pork with mashed potatoes and the sauteed leek.
