Deliciously sweet apple and pear salsa is the perfect complement to pork dishes.
Ingredients:
  • 2 josephine pears, diced
  • 4 pork loin cutlets
  • 2 pink lady apples, diced
  • 1/2 small red onion, thinly sliced
  • 1/2 small lemon, juiced
  • 32.00 gm brown sugar
  • 2 roma tomatoes, quartered, deseeded, thinly sliced
  • 2 tsp balsamic vinegar
  • 56.88 gm olive oil
  • mixed salad leaves, to serve
  • 262.50 gm apple juice
  • 89.38 gm honey
  • 1 clove garlic, crushed
  • 23.40 gm dijon mustard
  • 23.40 gm wholegrain mustard
Instructions:
  • Prepare the honey-mustard marinade by mixing all ingredients in a ceramic dish until the honey is fully dissolved.
  • Place the pork in the flavorful marinade, ensuring it is fully coated. Refrigerate for at least 2 hours, or ideally overnight for maximum flavor infusion.
  • Preheat your oven to 200°C. Mix apples, pears, onion, 1 tablespoon of lemon juice, and brown sugar in a bowl until everything is coated. Spread the mixture in a lightly-greased roasting pan. Roast for 15 minutes, or until light golden and almost tender. Transfer to a new bowl and add tomatoes, vinegar, 2 tablespoons of oil, salt, and pepper. Toss to coat evenly.
  • Preheat the barbecue plate over medium heat and drizzle with the remaining oil. Take the pork out of the marinade and barbecue each side for 6 to 8 minutes until cooked through. Place the pork on a plate, cover, and let it rest for 5 minutes. Spoon salsa onto plates, top with pork, and serve with salad leaves.
