Honey mustard pork roast with apples and pan gravy

Whip up a delicious honey mustard pork roast for the family.
Ingredients:
  • 46.80 gm Dijon mustard
  • 40.00 ml finely chopped fresh flat-leaf parsley leaves
  • 57.20 gm honey
  • 600g piece pork scotch fillet
  • 2 small pink lady apples or fuji apples, quartered, cored
  • 2 small red onions, cut into wedges
  • 12 fresh sage leaves
  • 30.00 ml plain flour
  • 382.50 gm salt reduced chicken style liquid stock
  • Baby brussels sprouts, steamed halved, to serve
Instructions:
  • Preheat the oven to 200C/180C fan-forced. Mix mustard, parsley, and honey in a glass or ceramic dish. Add the pork and massage to coat it thoroughly. For best results, cover and refrigerate overnight.
  • In a heavy flameproof roasting pan, heat half of the oil over medium-high heat. Add the pork and cook for 4 minutes, turning occasionally, until nicely browned. Remove from the heat.
  • Roast pork for 20 minutes, then surround with apple, onion, and sage. Drizzle with the rest of the oil and roast for another 25-30 minutes until pork is cooked and veggies are tender. Place on a plate, cover with foil, and let it stand for 10 minutes before serving.
  • Heat roasting pan over medium heat, then add flour and stir for 1 minute until mixture bubbles and thickens. Slowly pour in stock, stirring constantly for 5 minutes until sauce boils and thickens. Serve sliced pork with baked apple, onion, sage leaves, gravy, and brussels sprouts.
