Elevate your veggie bake with luscious pumpkin and crunchy Progresso panko bread crumbs.
Ingredients:
  • 3 lb cauliflower, separated into large florets
  • 3 tablespoons butter
  • 2 cups milk
  • 3/4 teaspoon salt
  • 1/4 teaspoon ground nutmeg
  • 1 1/4 cups shredded sharp Cheddar cheese (5 oz)
  • 1/2 cup canned pumpkin (not pumpkin pie mix)
  • 1/4 cup Progresso™ plain panko crispy bread crumbs
  • Salt and freshly ground black pepper
Instructions:
  • Preheat your oven to 375°F and generously grease a 2-quart baking dish.
  • In a large saucepan filled two-thirds with salted water, bring cauliflower to a gentle simmer. Cook for approximately 5 minutes or until tender. Drain well.
  • In a 2-quart saucepan, melt 2 tablespoons of butter over low heat. Stir in flour and cook for 1 minute, whisking constantly. Gradually pour in milk, stirring continuously until the mixture boils and thickens. Mix in 3/4 teaspoon salt, nutmeg, Cheddar cheese, and pumpkin until smooth.
  • In a baking dish, gently spread one-third of the sauce. Add the drained cauliflower and generously pour the rest of the sauce over the top.
  • Melt the remaining butter and mix it with the bread crumbs, then sprinkle the mixture on top of the gratin.
  • Bake until the top is beautifully golden brown, about 25 to 30 minutes.
