Elevate leftover veggies with a delicious vegetable panini - a cheesy, vegetarian sandwich perfect for a quick lunch or dinner.
Ingredients:
  • 1000.00 ml mixed vegetables, chopped (such as zucchini, capsicum, red onion, sweet potato, pumpkin, cauliflower)
  • 150g tomato medley mix
  • 250.00 ml quark, goat’s cheese or fresh ricotta
  • 40.00 ml chopped fresh herbs (such as dill, parsley or basil), plus extra, to serve
  • 36.40 gm extra virgin olive oil
  • 1⁄2 Turkish loaf, halved horizontally
  • Balsamic glaze, to serve
Instructions:
  • Preheat your oven to 180C/160C fan forced. Spread the mixed vegetables in a roasting pan. Drizzle with oil, season, and roast for 10 minutes. Then add tomatoes to the pan and roast for another 10 minutes until vegetables are tender.
  • In a small bowl, mix together the quark and herbs, then season to taste.
  • Slice the Turkish loaf into 4 pieces. Heat a chargrill pan over medium heat. Grill the bread, flipping occasionally, until lightly charred, about 1-2 minutes.
  • Spread the quark mixture generously on the bread bases. Layer with flavorful roasted vegetables and a sprinkle of fresh herbs. Drizzle with balsamic for extra flavor. Finish by placing the bread tops to create a delicious sandwich.
