Roasted vegetable and Christmas ham salad

Create a festive ham and roasted veg salad using Christmas leftovers.
Ingredients:
  • 250g pkt 90-second microwave brown rice (or leftover cooked rice)
  • 80ml (1/3 cup) extra virgin olive oil
  • 40.00 ml apple cider vinegar
  • 11.80 gm Dijon mustard
  • 7.20 gm honey
  • 40.00 ml natural sliced almonds, toasted
  • 380g leftover roast pumpkin, warmed
  • 140g leftover roasted baby carrots, warmed
  • 1 leftover roasted red onion, warmed
  • 100g leftover roasted cherry tomatoes, warmed
  • 400g sliced ham off the bone
  • Large handful of mixed salad leaves
Instructions:
  • Microwave the rice according to the packet instructions. Allow it to cool slightly. Whisk together oil, vinegar, mustard, and honey until well combined. Season to taste and set aside.
  • Combine the leftover roasted vegetables in a large bowl with sliced or chopped ham, salad leaves, and warmed rice. Gently toss together until well mixed. Serve on a platter or plates and drizzle with the dressing.
