Cheesy rice cakes

Elevate simple dinners with delicious rice cakes, perfect for a special touch. Serve on a bed of green salad for an elegant starter.
Ingredients:
  • 18.20 gm olive oil
  • 1 small onion, finely chopped
  • 1 garlic clove, crushed
  • 250g rice
  • 50g bocconcini, diced
  • 25g parmesan
  • 1 egg, lightly beaten
  • 20.00 ml chopped fresh basil
  • Salt & freshly ground pepper
  • Olive oil, to fry
Instructions:
  • In a frying pan over medium heat, sauté the onion and garlic in oil for 5 minutes until soft. Add rice and cook for 2-3 minutes until heated. Remove from heat and mix in bocconcini, parmesan, egg, flour, and basil. Season with salt and pepper.
  • Take the mixture and form it into 8 patties, each measuring 8cm in diameter.
  • Heat a generous layer of oil in a frying pan over medium heat. Cook the rice cakes in batches for 3 minutes on each side until beautifully golden. Place them on a paper towel-lined plate to drain excess oil.
  • Present the rice cakes alongside a fresh, vibrant salad.
