Cheesy spinach and tomato layered bread - a simple and delicious family dish!
Ingredients:
  • 120g pkt Brand Baby Spinach
  • 321.88 gm Brand Milk
  • 125.00 ml Brand Shredded Australian Tasty Cheddar
  • 6 thick slices Vienna loaf, halved crossways
  • 8 cherry vine tomatoes, cut from vine
  • 120g pkt Brand 4 Leaf Salad Mix
  • 66.25 gm French-style dressing
  • 40.00 ml chopped flat-leaf parsley
Instructions:
  • Preheat oven to 180°C (160°C fan). Grease four 1-cup ovenproof dishes. Place spinach in a bowl, cover with boiling water, let sit for 1 min until wilted. Drain, refresh with cold water, squeeze out excess liquid.
  • In a jug, combine milk, eggs, and cheddar cheese, whisk until smooth, then season to taste. In prepared dishes, layer bread and spinach. Pour the milk mixture over the bread and spinach. Press 2 tomatoes into the mixture in each dish. Bake for 25 minutes or until the dish is just set.
  • Place the salad mix in a bowl and generously drizzle with dressing. Gently toss until well combined.
  • Garnish the strata with fresh parsley and accompany with a side salad.
