Kid-friendly cheesy pasta bake.
Ingredients:
  • 375g dried fusilli pasta
  • 1 brown onion, chopped
  • 175g shortcut bacon rashers, chopped
  • 425g can condensed tomato soup
  • 257.50 gm milk
  • 375.00 ml grated pizza cheese
  • 125.00 ml grilled capsicum, roughly chopped (see note)
  • 40.00 ml finely chopped fresh flat-leaf parsley leaves, plus extra, to serve
Instructions:
  • Preheat your oven to 200C/180C fan-forced and prepare an 8-cup ovenproof dish by greasing it. Cook the pasta in a large saucepan of boiling salted water as per packet instructions until tender. Drain and transfer to a large heatproof bowl.
  • Heat oil in a saucepan over medium heat, then sauté onion and bacon until onion is softened and bacon is golden. Sprinkle in flour and cook for 1 minute. Pour in soup and milk, stirring constantly until mixture boils and thickens. Take off heat and fold in 1 cup of cheese.
  • Toss capsicum, parsley and soup mix into pasta until well mixed. Transfer to a baking dish. Top with remaining cheese. Bake until golden brown, 20-25 minutes. Serve hot.
