Easy Greek pasta bake recipe

Quick and delicious cheesy vegetarian pasta bake loaded with feta and olives for $2.30 per serving. A flavorful must-try dish!
Ingredients:
  • 350g Cucina Matese Penne Rigate Italian Pasta
  • 1 red onion, finely chopped
  • 1 red capsicum, deseeded, coarsely chopped
  • 44.40 gm tomato paste
  • 2 x 400g cans cherry tomatoes
  • 80g (1/2 cup) black olives, pitted
  • 20.00 ml chopped fresh oregano leaves, plus extra leaves, to serve
  • 100g feta, crumbled
  • 50g (1/2 cup) coarsely grated mozzarella
Instructions:
  • Cook the pasta in a large pot of salted boiling water according to the package instructions until it is al dente. Drain the pasta.
  • Heat oil in a large frying pan over medium heat. Sauté onion and capsicum until softened, about 5 minutes. Stir in garlic and tomato paste, cook until aromatic, about 30 seconds. Drain cherry tomatoes, reserving juice. Add half of the tomatoes, reserved juice, and 125ml (1⁄2 cup) water to the pan. Bring to a boil, then simmer on low for 5 minutes before removing from heat.
  • Preheat the grill to medium-high. Combine pasta, olives, and oregano in a frying pan. Season with salt and pepper. Transfer the mixture to a 2L (8 cup) baking dish. Arrange the remaining tomatoes on top. Sprinkle with feta and mozzarella. Grill for 5 minutes until the cheese is melted and bubbly. Serve with an extra sprinkle of oregano.
