Quick and easy Cheesy Tortellini Casserole: Boil tortellini, toss with tomato sauce, sprinkle cheese, bake until bubbly. Voilà, dinner!
Ingredients:
  • 1 1/2 pounds (24 ounces) prepared frozen cheese tortellini
  • Salt
  • 12 ounces cremini or white button mushrooms, roughly chopped or sliced into 1/4-inch slices
  • 3 cloves garlic, minced (about 1 tablespoon)
  • 1 28-ounce can crushed tomatoes
  • 1 large bunch Swiss chard, ribs removed, leaves chopped (about 2 cups), OR 2 cups fresh chopped spinach, OR 1/2 cup frozen spinach
  • 1 1/2 teaspoons dried basil or 1 tablespoon finely chopped fresh basil
  • 1/4 teaspoon fennel seeds, crushed
  • Pinch red pepper flakes
  • 1/2 cup grated Parmesan cheese
  • 4 to 6 ounces Mozzarella cheese slices, enough to cover the surface of the casserole
Instructions:
  • Preheat your oven to 400°F.
  • Cook the tortellini: Bring a large pot of water to a boil with 1 1/2 tablespoons of salt. Add the tortellini once boiling, and cook for 2 minutes until al dente. Drain and set aside; the pasta will finish cooking in the casserole.
  • Cook the mushrooms: As you cook the pasta, begin making the sauce. Heat a large non-stick pan over medium heat. Add the mushrooms and sauté them without adding any fat for 5 to 10 minutes until they release their natural juices. Once the mushrooms are moistened, mix in a tablespoon of butter.
  • Complete the sauce by stirring in the garlic, crushed fennel seeds, and red pepper flakes with the mushrooms and cook for an additional minute. Mix in the crushed tomatoes and dried or fresh basil. Increase the heat until it simmers, then reduce to a low simmer for 5 minutes. Fold in the chopped chard and cook for an additional 5 minutes until the chard wilts. Finish by blending in the grated Parmesan cheese and season with 1/2 teaspoon of salt according to your taste.
  • Combine the cooked tortellini with the sauce and take it off the heat. Transfer the tortellini mixture to a 9x13 casserole dish, ensuring it's evenly spread out. Layer sliced Mozzarella cheese on top of the tortellini.
  • Ensure the casserole is covered either by placing the foil so it doesn't touch the cheese, spreading a bit of olive oil on the inside of the foil, or using non-stick foil. Bake at 400°F for 20 minutes, then remove the foil and broil for an additional 4 to 5 minutes until the top is golden brown and bubbly.
