Cheesy Vegetable Lasagna

Vegetable-packed lasagna in creamy homemade cheese sauce.
Ingredients:
  • 12 lasagna noodles
  • 2 tablespoons olive oil
  • 2 heads fresh broccoli, chopped
  • 2 carrots, thinly sliced
  • 1 large onion, chopped
  • 2 green bell peppers, chopped
  • 2 small zucchini, sliced
  • 3 cloves garlic, minced
  • 0.5 cup all-purpose flour
  • 3 cups milk
  • 0.75 cup Parmesan cheese, divided
  • 0.5 teaspoon salt
  • 0.5 teaspoon pepper
  • 1 (10 ounce) package frozen chopped spinach, thawed
  • 1 (8 ounce) container small curd cottage cheese
  • 24 ounces ricotta cheese
  • 2.5 cups shredded mozzarella cheese, divided
Instructions:
  • Preheat the oven to a toasty 375 degrees F (190 degrees C) and generously grease a 9x13-inch casserole dish.
  • Bring a large pot of salted water to a boil. Cook lasagna noodles until al dente, about 8 to 10 minutes. Drain.
  • In a large cast iron skillet over medium heat, heat oil until shimmering. Add broccoli, carrots, onions, bell peppers, zucchini, and garlic. Cook for 7 minutes until tender and aromatic. Remove from heat and set aside.
  • In a medium saucepan, combine flour and gradually whisk in milk until smooth. Bring to a boil over medium heat. Cook for 5 minutes until thickened, stirring constantly. Add 1/2 cup Parmesan cheese, salt, and pepper, cooking for an additional minute while stirring constantly. Remove from heat and fold in spinach, reserving 1/2 cup of the mixture. In a small bowl, mix cottage and ricotta cheeses until well combined.
  • Begin by gently layering 1/2 cup of the spinach mixture at the bottom of the pan. Build layers of noodles, ricotta mixture, vegetables, spinach mixture, and 2 cups of mozzarella cheese, finishing with noodles on top. Finally, add the remaining spinach mixture, 1/2 cup of mozzarella cheese, and 1/4 cup of parmesan cheese to the dish before baking.
  • Place dish in a hot oven and bake for 35 minutes or until the top is lightly browned. Let it cool for about 10 minutes before serving.
