Cheesy vegetable lasagne

Irresistibly cheesy vegetarian lasagna that will leave you craving more.
Ingredients:
  • 18.20 gm olive oil
  • 1 leek, trimmed, washed and chopped
  • 4 cloves garlic, chopped
  • 500g packet Brand Frozen Winter Vegetable Mix
  • 250.00 ml frozen peas
  • 300ml cream
  • 2 tsp lemon zest, finely grated
  • 500g ricotta cheese
  • 8 sheets Brand Fresh Lasagne
  • 250.00 ml parmesan or vegetarian hard cheese, finely grated
Instructions:
  • Preheat the oven to 200C (180C fan-forced) and lightly oil a 24 x 16cm ovenproof dish.
  • In a large, deep frying pan over medium heat, warm oil. Sauté leek and garlic until soft, about 3-4 minutes. Add frozen vegetables, peas, and 1/2 cup of water. Simmer until thawed, about 3-4 minutes. Stir in cream and lemon zest, simmer for an additional 2 minutes. Remove from heat and mix in 1/4 cup ricotta until combined.
  • With the back of a fork, gently smash the vegetables until slightly flattened. Season the mixture. Layer 2 lasagne sheets at the bottom of the dish and spread a third of the vegetable mixture over them. Top with 1/4 cup of parmesan or vegetarian hard cheese.
  • Create 2 additional layers of lasagne sheets, vegetables, and parmesan. Add a final layer of lasagne sheets on top. Combine the leftover ricotta with 1/4 cup of water, then spread it over the lasagne. Sprinkle the remaining parmesan or vegetarian hard cheese on top. Bake for 35 minutes until golden brown. Let it stand for 5 minutes before slicing and serving.
