Creamy, cheesy gratin with sauteed zucchini, summer squash, and fresh herbs - a perfect summer side dish.
Ingredients:
  • 1 cup grated Gruyere cheese
  • 1 cup panko bread crumbs
  • 0.25 cup butter
  • 2 zucchini, sliced
  • 1 yellow squash, sliced
  • 2 shallots, diced
  • 1 clove garlic, minced
  • 2 tablespoons chopped fresh basil
  • 1 tablespoon chopped fresh rosemary
  • 1.5 tablespoons all-purpose flour
  • 0.75 cup light cream
Instructions:
  • Preheat your oven to a toasty 400 degrees F (200 degrees C).
  • Combine the rich Gruyere cheese with crispy panko bread crumbs in a mixing bowl.
  • Melt butter in a large skillet over medium heat. Add zucchini, yellow squash, shallots, and garlic; cook until softened, approximately 10 minutes. Stir in basil, rosemary, salt, and black pepper; cook until fragrant, about 1 minute.
  • Add flour to the skillet and gently pour in the cream while stirring continuously until the sauce thickens, about 3 to 5 minutes. Stir in half of the cheese mixture and then remove from heat.
  • Transfer the zucchini mixture into the baking dish and generously sprinkle the remaining cheese mixture on top.
  • Bake until the top is bubbly and gorgeously golden brown, approximately 20 minutes in the preheated oven.
