Blend arugula, almonds, garlic, and olive oil for a quick and delicious almond arugula pesto by Chef John.
Ingredients:
  • 0.5 cup arugula leaves, or more to taste
  • 0.33333334326744 cup olive oil
  • 0.33333334326744 cup raw almonds
  • 4 cloves garlic
Instructions:
  • Boil a pot of salted water. Blanch arugula for 30 seconds until bright green. Shock in ice water, then squeeze out water.
  • Blend the arugula, olive oil, almonds, and garlic in a blender until it forms a coarse puree, remembering to scrape down the sides. Transfer the puree to a bowl and season with salt to taste.
