Enhance squash flavor by scoring before baking for a stunning presentation and deep glaze infusion.
Ingredients:
  • 2 acorn squash, cut in half lengthwise and seeded
  • 2 tablespoons fresh orange juice
  • 2 tablespoons unsalted butter
  • 2 tablespoons maple syrup
  • 1 tablespoon brown sugar
  • ground black pepper to taste
  • 1 pinch cayenne pepper
Instructions:
  • Preheat the oven to 400°F (200°C).
  • Make shallow 1/4-inch slashes in the squash flesh, transfer to a baking dish, brush with orange juice, and sprinkle with salt to enhance the flavors.
  • Bake until golden brown, around 30 minutes in the preheated oven.
  • Simmer butter, maple syrup, brown sugar, black pepper, and cayenne pepper in a small skillet over medium heat until the mixture is smooth and the sugar has dissolved, stirring occasionally for about 3 minutes.
  • Take the squash out of the oven and discard any collected liquid. Brush each squash half with the glaze. Bake for an additional 20 minutes until tender. Drizzle any glaze from the bottom of the squash over the edges and season with more salt, if desired.
