Spicy marinara baked eggs with creamy Parmigiano-Reggiano topping - a decadent brunch delight.
Ingredients:
  • 0.33333334326744 cup marinara sauce
  • 0.5 teaspoon red pepper flakes
  • salt and freshly ground black pepper to taste
  • 1.5 teaspoons chopped fresh flat-leaf parsley
  • 2 eggs
  • 1 tablespoon finely shredded Parmigiano-Reggiano cheese
  • 2 teaspoons olive oil
  • 2 tablespoons heavy whipping cream
  • 2 slices toast
Instructions:
  • Preheat your oven to a toasty 400 degrees F (200 degrees C).
  • Pour a generous layer of marinara sauce into a small baking dish, creating a 1/4-inch base. Sprinkle with red pepper flakes, salt, pepper, and parsley. Create a well in the center for the eggs to nestle into.
  • Break each egg into a ramekin and gently transfer onto the marinara sauce in the baking dish.
  • Top with the luxurious flavors of Parmigiano-Reggiano cheese, a drizzle of olive oil, and a touch of cream. Season generously with salt and freshly ground black pepper to elevate the flavors.
  • Place the dish in the heated oven until the egg yolks are perfectly set, for about 10 to 12 minutes. Enjoy with a side of toast.
