Indulgent French beurre blanc sauce infused with wine, shallots, and cream, ideal for pairing with seafood.
Ingredients:
  • 0.5 cup dry white wine (such as Sauvignon Blanc)
  • 2 tablespoons lemon juice
  • 2 tablespoons heavy cream
  • 2 teaspoons very finely minced shallots
  • 4 ounces cold unsalted butter, cut into 1-inch cubes
  • 1 pinch cayenne pepper
  • salt to taste
Instructions:
  • Prepare all your delicious and fresh ingredients.
  • In a saucepan, combine wine, lemon juice, cream, and shallots. Bring to a simmer over medium-high heat, then reduce to medium heat and simmer until the liquid reduces by about 75%, for about 4 to 5 minutes.
  • Lower the heat to minimum and incorporate 2 cubes of butter, stirring constantly until fully melted. Gradually add more butter cubes while whisking vigorously to create a smooth emulsion with the wine and lemon juice.
  • Gradually incorporate the remaining butter, a few cubes at a time, until the sauce reaches a rich, velvety consistency in about 4 to 6 minutes.
  • Take the saucepan off the heat, then sprinkle with cayenne pepper and salt.
