Whip up a quick and delicious BLT pasta with the classic flavors of America's favorite sandwich.
Ingredients:
  • 1 tablespoon olive oil
  • 0.5 pound bacon, cut crosswise into 1-inch pieces
  • 2 cloves garlic, minced
  • 2 teaspoons lemon zest
  • 0.66666668653488 cup creme fraiche
  • 2 cups ditalini pasta
  • 2 cups halved cherry tomatoes
  • 4 cups baby arugula, coarsely chopped
  • salt and ground black pepper to taste
  • 1 pinch cayenne pepper, or to taste
  • 1 tablespoon freshly shredded Parmesan cheese, or to taste
Instructions:
  • Heat olive oil in a heavy skillet over medium heat. Cook bacon until almost crisp, about 5 to 8 minutes. Turn off the heat and use a paper towel held with tongs to remove excess bacon grease, leaving about 2 teaspoons in the skillet.
  • Combine minced garlic and lemon zest with crispy bacon in the skillet, allowing the flavors to develop in the residual heat for 2 to 3 minutes. Then, stir in the creme fraiche to create a creamy and flavorful mixture.
  • 1. Boil generously salted water in a large pot and add ditalini. Cook until tender, roughly 8 minutes. Drain the pasta and combine it with the bacon and creme fraiche in the skillet, stirring thoroughly to mix.
  • Place the skillet back over medium heat. Add the tomatoes and cook while stirring until slightly softened, approximately 1 minute. Then, add the arugula, stirring until wilted for about 30 seconds, and then remove the skillet from the heat.
  • Season generously with a blend of salt, black pepper, and cayenne pepper. Stir to incorporate the flavors, and finish by topping off with a sprinkle of savory Parmesan cheese.
