Indulgent bourbon-glazed carrots cooked with butter and brown sugar - a decadent holiday side dish by Chef John.
Ingredients:
  • 0.5 cup butter
  • 2 pounds carrots, peeled, cut into equal-sized pieces
  • 0.5 teaspoon salt, or more to taste
  • 0.5 cup bourbon whiskey
  • 0.33333334326744 cup brown sugar
  • freshly ground black pepper to taste
  • 1 pinch cayenne pepper, or to taste
  • 2 sprigs fresh thyme leaves for garnish
Instructions:
  • In a hot skillet, melt butter until it foams. Stir in carrots and salt, cooking until liquid evaporates and carrots start to brown, about 5 to 6 minutes.
  • Lower the heat to medium-low and carefully pour in the bourbon. Cook and stir until the bourbon is nearly evaporated, approximately 2 minutes. Sprinkle in the brown sugar and continue to cook and stir until the carrots are almost cooked through, around 5 minutes more.
  • Turn up the heat to medium-high and simmer until the glaze thickens in just 15 to 30 seconds. Season with ground black pepper and cayenne pepper, then plate the carrots and top them off with fresh thyme leaves for a vibrant finish.
