Create delicious homemade breakfast sausage patties with coarsely ground pork shoulder and flavorful seasonings.
Ingredients:
  • 1 pound coarsely ground pork shoulder
  • 2 teaspoons fennel seeds, or more to taste - lightly crushed
  • 2 teaspoons freshly grated orange zest
  • 1 teaspoon kosher salt
  • 0.5 teaspoon freshly ground black pepper
  • 0.5 teaspoon dried Italian herb seasoning
  • 0.125 teaspoon red pepper flakes
  • 1 pinch freshly grated nutmeg
Instructions:
  • Combine pork, fennel seeds, orange zest, salt, black pepper, Italian seasoning, red pepper flakes, and nutmeg in a bowl. Gently stir with a fork until just mixed. Cover and refrigerate overnight.
  • To ensure perfect flavor: Form a small patty with 2 teaspoons of sausage and pan-fry until golden. Allow to cool for 1 to 2 minutes, then taste for seasoning.
  • Cover a cutting board with plastic wrap. Divide the sausage into 6 equal pieces, roll each into a ball, wrap with plastic, and flatten into patties. Discard the plastic wrap.
  • Heat a cast iron skillet over medium-high heat. Cook patties until meat is cooked through and sausage is browned, about 3 minutes per side. Serve hot.
