Chef John's breakfast potatoes are irresistibly delicious with a crispy outside and creamy inside.
Ingredients:
  • 2 1/4 pounds Yukon Gold potatoes, peeled, quartered
  • 6 cups cold water
  • 4 1/2 teaspoons kosher salt, plus as needed
  • scant 1/2 teaspoon baking soda
  • 3 tablespoons olive oil
  • 1/8 teaspoon garlic powder
  • 1/8 teaspoon onion powder
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon black pepper
  • pinch cayenne
  • Optional Onions and Peppers:
  • 2 tablespoons olive oil
  • 3/4 cup diced red onion
  • 1/2 cup diced peppers
  • salt to taste
  • 1/3 cup sliced green onions
Instructions:
  • In a large pot over high heat, bring water, 4 1/2 teaspoons of kosher salt, and baking soda to a boil. Add potatoes, simmer until just barely tender for 10 to 12 minutes. Drain and let sit for 30 seconds before using.
  • In a large mixing bowl, combine olive oil, garlic powder, onion powder, paprika, ground pepper, and cayenne; whisk until well blended.
  • Coat the potatoes evenly with the seasoned oil in the bowl by tossing with a spatula until they're textured on the surface.
  • Preheat the oven to a toasty 450 degrees F (230 degrees C) and prepare a baking sheet with parchment paper.
  • Lay the potatoes out on the baking sheet and drizzle any remaining mashed potato bits from the bowl over them. Sprinkle with a pinch of salt.
  • Roast in the preheated oven until the potatoes are golden brown and crispy on the edges, about 45 to 60 minutes. Be sure to flip the potatoes every 15 to 20 minutes for optimal crispiness.
  • Heat olive oil in a large skillet over medium heat. Sauté onions, peppers, and salt until onions are soft and translucent and peppers have softened and sweetened, about 5 minutes. Remove from heat and mix in green onions to gently cook with the remaining heat.
  • Garnish with sauteed onions and peppers before serving while hot.
