Chef John's Butterless Bearnaise Sauce

Egg yolk thickened bearnaise sauce with tarragon Dijon twist.
Ingredients:
  • 2 egg yolks
  • 0.5 teaspoon freshly ground black pepper, or to taste
  • 2 teaspoons tarragon Dijon mustard
  • 1 teaspoon tarragon vinegar
  • 1 teaspoon water
  • 1 pinch salt
Instructions:
  • In a metal mixing bowl or small saucepan, whisk together egg yolks, black pepper, Dijon mustard, tarragon vinegar, water, and salt. Heat over low heat, continue whisking until the mixture foams, steams slightly, and thickens in 1 to 2 minutes. Adjust heat as needed by moving the pan on and off the heat source.
  • Whisk the sauce off the heat until slightly fluffy, then serve immediately.
