Revamp leftover grilled chicken into a flavorful cashew chicken inspired by Chinese cuisine.
Ingredients:
  • 2 grilled skinless, boneless chicken breasts, cut into 1-inch pieces
  • 1 pinch salt and ground black pepper to taste
  • 1 tablespoon cornstarch
  • 1 lemon, juiced
  • 1.5 tablespoons rice vinegar
  • 1 tablespoon ketchup
  • 1 tablespoon soy sauce, or more to taste
  • 1 tablespoon packed brown sugar
  • 2 teaspoons Asian chile pepper sauce (such as sambal oelek)
  • 2 tablespoons vegetable oil
  • 1 fresh hot red chile pepper, sliced
  • 6 thin slices fresh ginger root
  • 0.5 cup dry-roasted cashews
  • 2 cloves garlic, sliced
Instructions:
  • Season the chicken cubes generously with a pinch of salt and a sprinkle of freshly ground black pepper.
  • Combine water and cornstarch in a bowl until smooth. Whisk in lemon juice, rice vinegar, ketchup, soy sauce, brown sugar, and chile pepper sauce, stirring until sugar dissolves and mixture is lump-free.
  • Heat a heavy skillet over medium-high heat and add vegetable oil. Sauté red chile and ginger in the hot oil, stirring often, for about 2 minutes until oil is infused with flavors. Then add cashews and garlic, cooking until cashews are lightly golden brown, about 2 more minutes.
  • Combine seasoned chicken cubes with cashew mixture in skillet, stirring for about 30 seconds until combined. Reduce heat to medium-low and add cornstarch mixture to the skillet. Stir constantly until sauce thickens, about 30 seconds. If needed, add a splash of water to adjust thickness. Simmer for an additional 2 minutes to heat the chicken through.
  • Taste and season with salt, black pepper, soy sauce, and chile pepper sauce as needed. Quickly stir in cilantro until just wilted, approximately 15 seconds.
