Spicy, dark chocolate cookies with a surprising kick from black pepper and cayenne - irresistibly addictive.
Ingredients:
  • 0.5 cup dried currants
  • 2 tablespoons coffee flavored liqueur (such as Kahlua®)
  • 4 ounces unsweetened chocolate
  • 2 ounces bittersweet chocolate
  • 3 tablespoons unsalted butter
  • 0.5 cup all-purpose flour
  • 0.5 teaspoon freshly ground black pepper
  • 0.25 teaspoon baking powder
  • 0.25 teaspoon salt
  • 0.125 teaspoon ground cinnamon
  • 0.125 teaspoon cayenne pepper
  • 0.75 cup sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 1 cup dark chocolate chips
Instructions:
  • Preheat your oven to a toasty 350°F (175°C).
  • Prepare two baking sheets by lining them with parchment paper or silicone baking mats.
  • In a saucepan over low heat, gently warm currants and coffee liqueur until simmering, approximately 2 minutes. Set aside.
  • In a bowl, combine unsweetened chocolate, bittersweet chocolate, and butter. Place the bowl over a saucepan with 1 inch of water on low heat. Stir occasionally until the chocolate is melted, approximately 5 minutes. Remove from heat and set aside.
  • In a large bowl, combine flour, black pepper, baking powder, salt, cinnamon, and cayenne pepper. Set aside.
  • In a small bowl, whisk together sugar and eggs until light, fluffy, and pale yellow, for about 5 minutes. Gradually mix in vanilla and melted chocolate mixture.
  • Gently mix the flour mixture into the sugar and chocolate mixture until fully incorporated.
  • Fold in decadent dark chocolate chips and plump currants soaked in rich liqueur.
  • Place dollops of cookie dough 2 inches apart on the baking sheets.
  • Simply bake the cookies in the preheated oven for about 12 minutes, or until they are almost set.
  • Take out of the oven and allow to cool on the baking sheets for 5 minutes.
  • Place the dish on a cooling rack and let it cool completely for 5 minutes.
