Elevate leftover Thanksgiving turkey with Chef John's tasty turkey chili mac using basic ingredients.
Ingredients:
  • 2 tablespoons olive oil
  • 1 medium yellow onion, diced
  • 1 teaspoon salt, or more to taste
  • 2 tablespoons chili powder, or to taste
  • 0.5 teaspoon ground dried chipotle pepper, or more to taste
  • 1 teaspoon ground black pepper
  • 1 teaspoon ground cumin
  • 1 teaspoon unsweetened cocoa powder
  • 1 pinch ground cinnamon
  • 0.5 teaspoon dried oregano
  • 3 cloves garlic, minced
  • 4 cups chicken broth, or more as needed
  • 1 (10 ounce) can diced tomatoes with green chile peppers
  • 1 cup tomato sauce
  • 1 pound coarsely chopped leftover turkey
  • 1 (15 ounce) can pinto beans, rinsed and drained
  • 1 cup elbow macaroni
  • 0.5 cup grated white Cheddar cheese
Instructions:
  • In a pot over medium-high heat, heat olive oil. Add onion and 1 teaspoon salt. Cook, stirring, for about 5 minutes until onion softens and becomes translucent.
  • As the onion simmers, create a flavorful spice blend by mixing chili powder, chipotle pepper, cumin, black pepper, cocoa powder, cinnamon, and oregano in a small bowl.
  • Sauté the garlic and spice mixture with the onion, stirring constantly, for 1 to 2 minutes.
  • Combine 4 cups of flavorful chicken broth with diced tomatoes with chiles, and tomato sauce. Increase heat to high and let it come to a lively simmer. Lower the heat to medium-low and gently simmer for 15 minutes, stirring occasionally.
  • Combine the remaining turkey meat with extra chicken broth, if necessary. Simmer, stirring occasionally, for an additional 15 minutes.
  • Season to taste, raise heat to high, and bring to a lively boil. Add pinto beans and elbow macaroni to the pot, cover tightly, and cook until pasta is just tender, around 5 minutes.
  • Turn off the heat and uncover the pot. Stir the contents thoroughly. Cover the pot again and let it rest for 5 minutes with the heat off. Uncover, mix in the Cheddar cheese, and serve promptly.
