Turkey Chili Mole

Ingredients:
  • 3/4 lb ground turkey breast
  • 1 small onion, chopped (1/4 cup)
  • 1/4 cup chopped green bell pepper
  • 2 jalapeño chilies, seeded and finely chopped
  • 1 garlic clove, finely chopped
  • 1 tablespoon plum preserves
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 oz unsweetened baking chocolate, chopped
  • 1 can (28 oz) diced tomatoes with Italian-style herbs, undrained
  • 1 can (19 oz) red kidney beans, drained
  • plain fat-free yogurt, if desired
Instructions:
  • In a 4-quart Dutch oven, sauté turkey, onion, bell pepper, chilis, and garlic over medium heat for 5-8 minutes, stirring occasionally, until turkey is cooked through.
  • Add the rest of the ingredients to the pot excluding the yogurt. Bring to a boil, then lower the heat, cover, and simmer for 30 minutes, stirring now and then. Serve each portion with a dollop of yogurt on top.
