Try Chef John's famous city chicken: pork on a skewer, breaded and fried for a taste of American history.
Ingredients:
  • 1 whole pork tenderloin
  • 6 (6 inch) bamboo skewers
  • salt and freshly ground black pepper to taste
  • dried thyme to taste
  • 1 pinch cayenne pepper, or to taste
  • 2 eggs, beaten, or more as needed
  • 0.5 cup all-purpose flour, or as needed
  • 0.5 cup panko bread crumbs, or as needed
  • 2 cups vegetable oil, or as needed
Instructions:
  • Divide tenderloin into three sections: thick center and two ends. Cube the thinner end. Slice thick center lengthwise, then cut all sections into 1/2-inch slices.
  • Skewer pork pieces from smallest to widest, shaping them to look like chicken drumsticks.
  • Season the 'drumsticks' on skewers generously with salt, black pepper, thyme, and cayenne pepper on all sides.
  • Beat eggs in one bowl, place flour in another, and transfer bread crumbs to a third bowl.
  • Press 'drumsticks' into flour, shake off excess. Dip into egg, then press into bread crumbs. Arrange on a plate in a single layer and refrigerate, uncovered, for 15 minutes.
  • In a shimmering cast-iron skillet, sear 'drumsticks' until golden brown and cooked through, about 4 to 5 minutes per side. Rest on a paper-towel lined plate for 5 minutes before seasoning with salt.
