Create crispy potato latkes with Chef John's foolproof recipe, topped with savory salmon, creamy sour cream, and fresh dill.
Ingredients:
  • 2.25 pounds russet potatoes, peeled and grated
  • 0.5 yellow onion, grated
  • 2 large eggs
  • 3 tablespoons all-purpose flour
  • 1 teaspoon salt
  • 0.5 teaspoon freshly ground black pepper
  • 1 pinch cayenne pepper
  • 1 cup vegetable oil for frying
Instructions:
  • In a large bowl, combine potatoes and onion, covering them with several inches of cold water. Allow them to soak fully for 20 to 30 minutes. Drain the potato mixture in a colander, then rinse, drain, and squeeze to remove excess moisture.
  • Combine eggs, flour, salt, black pepper, and cayenne pepper in a bowl and whisk until mixture is smooth.
  • Combine the potato and egg mixtures in a large bowl using a spatula.
  • In a heavy skillet over medium-high heat, heat 1/4-inch of oil until shimmering. Drop large spoonfuls of potato batter into the hot oil and flatten with a spatula to 1/2-inch thickness. Cook until the edges are crispy and golden brown, about 3 to 5 minutes. Reduce heat to medium, flip pancakes, and cook until the other side is golden brown and crispy, about 5 minutes more. Repeat with remaining batter.
