Indulge in Chef John's irresistible potato chip pizza enhanced with flavorful pesto and gooey melted cheese for a mouthwatering twist on a classic favorite.
Ingredients:
  • 4 tablespoons olive oil, divided
  • 1 tablespoon cornmeal
  • 2 (10 ounce) containers prepared pizza dough
  • 1 cup prepared pesto sauce
  • 1.5 cups grated sharp white Cheddar cheese
  • 1 (10 ounce) bag kettle-cooked potato chips
  • 1 small red onion, thinly sliced
  • 1.5 cups grated mozzarella cheese
Instructions:
  • Preheat your oven to a sizzling 500 degrees F (260 degrees C). Gently coat 2 sheet pans with a touch of olive oil and sprinkle a hint of cornmeal. Set them aside for use.
  • Roll out each dough ball into a thin oval shape and place on baking sheets. Spread pesto on each crust, saving 2 tablespoons for later. Top each with Cheddar cheese, then add a layer of potato chips, making sure to overlap for full coverage.
  • Thin out the reserved pesto with a tablespoon of olive oil and generously drizzle over the chips. Top with red onions and mozzarella, then finish off with a light drizzle of olive oil on the pizzas.
  • Bake the pizza in the center of the preheated oven until both the top and bottom crust are beautifully browned, for around 12 to 15 minutes. Allow it to rest for 5 minutes before slicing into it.
