Elevate mashed potatoes with kale and leeks for a flavorful St. Patrick's Day twist.
Ingredients:
  • 3 large russet potatoes, peeled and quartered
  • 2 tablespoons butter at room temperature
  • 4 ounces kale, trimmed and chopped
  • 1 leek, light parts only, rinsed and chopped
  • 1 bunch green onions, chopped, white and green parts separated
  • 0.25 cup heavy whipping cream
  • 2 tablespoons butter, for serving
  • 0.25 cup green onions to garnish
Instructions:
  • Cook the potatoes in a generous amount of salted water until tender, around 10 minutes. Drain and transfer them to a big bowl. Stir in 2 tablespoons of butter and gently mash the potatoes.
  • Cook kale and leeks in boiling water until tender, then drain and add them to a blender with the white parts of the green onions and 2 more tablespoons of butter. Blend until smooth, scraping down the sides as needed.
  • Combine the kale puree with the potatoes and mash well. Season with salt and black pepper. Add cream and stir until reaching desired consistency. Garnish with 2 tablespoons of butter and the green parts of the onions.
