Chef John's tantalizing oven-baked sliced russet potato cottage fries, spiced with salt, black pepper, cayenne, and herbs de Provence.
Ingredients:
  • 4 baking (russet) potatoes, sliced into 3/8-inch thick rounds
  • salt and freshly ground black pepper to taste
  • 1 pinch cayenne pepper, or to taste
  • 1 pinch herbes de provence, or to taste
  • 2 tablespoons olive oil
Instructions:
  • Preheat the oven to 425 degrees F (220 degrees C) and prepare a baking sheet with parchment paper or a silicone baking mat.
  • In a large bowl, mix together potatoes, salt, black pepper, cayenne pepper, and herbes de Provence. Drizzle with olive oil and toss to coat evenly. Spread potatoes out evenly on the baking sheet.
  • After preheating the oven, bake the potato slices for 15 minutes, flip them over, and continue baking for an additional 15 minutes.
  • Bake and flip the potatoes until golden brown all over, approximately 30 minutes. The edges should be crispy while the centers remain soft.
