Chef John's Duchess Potatoes

Make ahead Duchess potatoes - elegant side dish for any occasion. Just bake when ready.
Ingredients:
  • 3 pounds russet potatoes, peeled and quartered
  • 3 tablespoons cold unsalted butter
  • 2 teaspoons kosher salt, or to taste
  • 1 pinch cayenne pepper
  • 1 pinch ground nutmeg
  • 0.333 cup cream
  • 3 large egg yolks
  • 2 tablespoons melted butter
Instructions:
  • Place potatoes in a pot of generously salted cold water. Bring to a boil over high heat, then simmer on medium-low until potatoes are fork-tender but firm, around 30 to 45 minutes. Drain thoroughly and allow to rest in a strainer for at least 5 minutes.
  • In a bowl, mash the potatoes until smooth. Stir in 3 tablespoons of butter, along with salt, cayenne, and nutmeg, until the butter is fully incorporated and the mixture is smooth.
  • Whisk cream and egg yolks into the mixture until smooth. Season to taste and adjust as needed. Let mashed potatoes cool to room temperature before covering.
  • Preheat the oven to a toasty 450 degrees F (220 degrees C) and prepare a baking sheet with parchment paper.
  • Transfer the mixture into a piping bag to easily pipe out 12 portions on the baking sheet. Alternatively, you can use a scoop to form 12 portions. Refrigerate the potatoes until ready to bake.
  • Drizzle or brush each duchess potato with a touch of melted butter for extra richness and flavor.
  • Bake until golden brown in the preheated oven for about 20 minutes.
