Chef John's Easy Homemade Pizza Dough

Perfect pizza dough for a flavorful, tender, and chewy crust.
Ingredients:
  • 0.25 cup whole wheat flour
  • 3 cups all-purpose flour
  • 0.25 teaspoon active dry yeast
  • 1.25 teaspoons salt
  • 0.25 teaspoon white sugar
  • 1.5 cups warm water (100 degrees F or 38 degrees C)
  • all-purpose flour, for dusting
Instructions:
  • Combine the whole wheat flour, all-purpose flour, yeast, salt, sugar, olive oil, and warm water in a large bowl and stir with a spatula for 3-4 minutes until a sticky dough forms and pulls away from the sides of the bowl.
  • Cover the bowl with a light cloth or plastic wrap and allow it to rise in a warm place (80 to 95 degrees F (27 to 35 degrees C)) for 18 hours, until it has doubled in size.
  • Preheat the oven to a fiery 550 degrees F (280 degrees C) and generously scatter cornmeal on a baking sheet.
  • Transfer the dough onto a lightly floured surface and dust with extra flour. Shape the dough into a rectangle, then divide it into four equal parts. Form each portion into a ball, gently stretching and smoothing the dough to ensure a uniform surface, adding additional flour as necessary. Cover the dough balls with a towel and allow them to rest for 15 minutes.
  • Sprinkle flour on the surface and gently flatten the dough. Roll out into a 9-inch disk using a rolling pin.
  • Place the crust on the baking sheet and add your favorite toppings. Bake on the bottom rack for 4 minutes. Transfer to the middle rack and bake for an additional 5-6 minutes until the crust is crispy on the bottom and lightly browned on top. Let it cool on a rack before serving.
