Make Chef John's easy homemade chicken gravy by combining blonde roux, rich stock, and cream. Say goodbye to powdered packets for good!
Ingredients:
  • 0.5 cup all-purpose flour
  • 1 quart cold chicken stock, or more if needed
  • 0.33333334326744 cup heavy cream
  • salt and ground white pepper to taste
  • 1 pinch cayenne pepper
Instructions:
  • In a saucepan over medium-low heat, melt butter. Gradually whisk in flour, reduce heat to low, and stir until the roux turns golden and smells like a pie crust, about 10-12 minutes.
  • Gradually whisk in 2 cups of cold stock, ensuring a smooth consistency. Stir in the remaining 2 cups of stock.
  • Simmer gently, stirring occasionally, until the gravy thickens to coat the back of a spoon, about 10-15 minutes.
  • Add heavy cream and season with salt, white pepper, and cayenne. Taste the gravy and if it still tastes starchy, simmer longer and add more cold stock if needed.
  • Enjoy your dish piping hot!
