Consistently good gravy

Create a delicious homemade gravy with just meat and vegetables.
Ingredients:
  • roast chicken
  • roasted vegetables
  • 1 heaped dessertspoon plain flour
  • 1 wineglass red or white wine, or cider or a good splash of port or sherry
  • 1 litre organic stock
Instructions:
  • When making the gravy, first, remove 90% of the hot fat from the tray by angling it away from you and scooping off the fatty layer. Return the tray to high heat, add flour, then use a potato masher to mash the veg. Add alcohol, then stock, and let it boil. Finally, simmer for 10 minutes until desired consistency. Strain the gravy through a sieve, discard any leftovers, and either serve immediately or simmer to thicken.
