Indulge in irresistibly crispy homemade fried chicken, paired perfectly with golden fries and savory gravy for a fast-food feast at home.
Ingredients:
  • 390.00 gm buttermilk
  • 1.5kg mixed chicken pieces, bone in (see note)
  • 2 eggs
  • 375.00 ml plain flour
  • Vegetable oil, for deep-frying
  • Oven-baked chips, to serve
  • Gravy, to serve
  • 9.60 gm celery salt
  • 2 tsp garlic powder
  • 1/2 tsp dried thyme
  • 1/2 tsp dried basil
  • 1/2 tsp dried oregano
  • 20.00 ml mustard powder
  • 20.00 gm paprika
  • 2.50 gm ground ginger
  • 2.40 gm salt
  • 2 tsp coarsely ground black pepper
Instructions:
  • Create the Not-so Secret Seasoning by combining celery salt, garlic powder, thyme, basil, oregano, mustard powder, paprika, ginger, salt, and pepper in a screw-top jar. Secure the lid and shake vigorously to blend all the flavors.
  • In a large snap-lock bag, combine 1 tablespoon of the seasoning with buttermilk and chicken. Seal the bag and massage the chicken to ensure it is evenly coated in the marinade. Refrigerate overnight to enhance the flavors.
  • Separate the chicken from the marinade and let it rest for 15 minutes.
  • Whisk eggs in a shallow bowl. Combine flour and remaining seasoning in a separate bowl. Coat chicken in flour, dip in egg, and coat again in seasoned flour. Shake off excess and place on a plate.
  • Heat a generous amount of oil in a large saucepan or wok until it reaches 165ºC. Deep-fry chicken in batches, turning, for 8 to 12 minutes until golden brown and cooked through. Drain on paper towels.
  • Plate the chicken alongside crispy chips and rich gravy for a comforting and satisfying meal.
