Homemade fried rice: Quick, easy, and delicious comfort food.
Ingredients:
  • 270g rice
  • 1/2 tsp sesame oil
  • 27.30 gm peanut oil
  • 4 middle bacon rashers, rind removed, chopped
  • 125g baby corn, halved lengthways
  • 3 shallots, trimmed, diagonally sliced into 3cm lengths
  • 1 garlic clove, crushed
  • 150g pea
  • 200g small cooked peeled prawns
  • 42.00 gm soy sauce
  • Lime cheeks or wedge, to serve
Instructions:
  • Prepare the rice following the packet instructions. Rinse with cold water to slightly cool it. Chill in the fridge until completely cool. Combine the eggs and sesame oil by whisking together.
  • In a wok or large deep frying pan over medium heat, heat 1 tablespoon of peanut oil. Pour in the eggs and stir occasionally for 1-2 minutes until they are set. Remove from the pan and set aside.
  • Turn up the heat to medium-high. Heat the rest of the peanut oil. Stir in the bacon, corn, shallots, and garlic. Stir-fry for 4 minutes.
  • Combine peas and prawns in the stir-fry for 2 minutes. Mix in rice and soy sauce until fully combined. Gently fold in the eggs. Serve in bowls with a lime wedge for squeezing over the top.
