Ingredients:
  • 1 tablespoon butter
  • 0.5 cup uncooked white rice
  • 1 cup water
  • 0.5 cup hoisin sauce
  • 0.5 cup barbeque sauce
  • 1 tablespoon peanut butter
  • 1.5 teaspoons soy sauce
  • 1 clove garlic, minced
  • 1 teaspoon grated fresh ginger root
  • 2 teaspoons sesame oil
  • 1 cup chopped onion
  • 1 cup grated carrot
  • 2 cups frozen pea pods
  • 2 cups frozen chopped broccoli, thawed
  • 2 eggs
  • 0.25 cup sesame seeds, lightly toasted
Instructions:
  • In a small saucepan over medium heat, melt the butter until sizzling. Add the uncooked rice and toast until golden, stirring occasionally. Pour in the water, bring to a boil, then simmer covered on low for about 15 minutes until tender.
  • Combine hoisin sauce, barbeque sauce, peanut butter, soy sauce, garlic, and ginger in a mixing bowl while the rice cooks. Set aside.
  • Once the rice is fully cooked, warm the sesame oil in a wok or large skillet over medium-high heat until it starts to smoke. Cook the onion until clear, then add the carrot and cook for 1 minute. Add the cooked rice and stir-fry for 2 minutes. Toss in the broccoli and peas, cook and stir for 1 more minute. Push the ingredients to the sides, crack the eggs in the center, scramble until cooked through without mixing with the rest. Finally, incorporate the eggs into the rice mixture before serving.
  • Remove the pan from the heat and gently incorporate half of the sauce, adjusting to taste. Reserve any extra sauce for another use, such as pairing with meat. Finish with a sprinkle of sesame seeds before serving.
