Flavorful pork fried rice with garlic, ginger, carrots, broccoli, and peas, perfect for repurposing leftover rice.
Ingredients:
  • 1 tablespoon butter
  • 1 (6 ounce) boneless pork loin chop, cut into small pieces
  • 1 green onion, chopped
  • 0.25 cup chopped carrot
  • 0.25 cup chopped broccoli
  • 1 egg, beaten
  • 1 cup cold cooked rice
  • 0.25 cup frozen peas
  • 1.5 tablespoons soy sauce
  • 0.125 teaspoon garlic powder
  • 0.125 teaspoon ground ginger
Instructions:
  • In a generous non-stick skillet, melt butter over medium heat. Stir in pork, green onion, carrot, and broccoli, cooking until pork is fully cooked, about 7 to 10 minutes. Move pork mixture to a bowl and heat the skillet again over medium heat.
  • Whisk the egg in the skillet until fully cooked. Return the pork to the skillet and mix in the rice, peas, soy sauce, garlic powder, and ground ginger. Keep stirring until everything is heated through, about 7 to 10 minutes.
