Delicious pork and quinoa fried rice bursting with flavor!
Ingredients:
  • 1 cup quinoa
  • 1.5 cups cold water
  • salt to taste
  • 1 tablespoon vegetable oil
  • 1 cup cubed fully cooked ham
  • 0.5 cup diced red bell pepper
  • 0.5 cup chopped green onion, white and green parts separated
  • 3 cloves garlic, minced
  • 1 tablespoon rice vinegar
  • 1 tablespoon soy sauce, or to taste
  • 1 teaspoon chile-garlic sauce (such as Sriracha®), or more to taste
  • 1 teaspoon sesame seeds, or to taste
Instructions:
  • Thoroughly rinse quinoa under cold water for 1 minute, ensuring it is well-drained.
  • In a saucepan, simmer quinoa with 1 1/2 cups of cold water and a pinch of salt until tender, about 15 minutes. Let it rest for 5 minutes off the heat, then fluff with a fork before serving.
  • In a large skillet over medium heat, sizzle the ham, bell pepper, and white parts of the green onion in vegetable oil until the ham turns golden brown, about 5 minutes. Off the heat, mix in garlic and stir until fragrant, about 1 to 2 minutes.
  • Add the fluffed quinoa into the mixture and place back on the stove over medium-low heat. Cook for 2 to 3 minutes, stirring occasionally until heated through. Take it off the heat and mix in vinegar, soy sauce, chile-garlic sauce, and sesame seeds. Top it off with the dark green parts of the green onion for a perfect finishing touch.
