Elevate leftover pork with flavorful sambal oelek for a delicious twist.
Ingredients:
  • 150 g leftover higher-welfare roast pork
  • 2 cloves of garlic
  • 3cm piece of ginger
  • 1 bunch of spring onions
  • 50 g frozen peas
  • 2 tablespoons peanut or sunflower oil
  • 2 tablespoons sambal oelek
  • 300 g ready-prepared rice vermicelli
  • 1 lime
Instructions:
  • Prepare the pork by shredding or chopping it. Finely chop the garlic and ginger, and slice the whites and greens of the spring onions. Boil water in a small pan, then add the peas and bring it back to a boil until the peas are defrosted. Drain and cool the peas with cold water. In a large frying pan, pour oil, add garlic, ginger, and spring onion, and cook briefly. Stir in sambal olek or fresh red chillies, then add noodles, pork, and peas. Heat everything together, squeeze lime juice, and serve.
