Stir-fried noodles with pork & bok choy

Ingredients:
  • 200g rice vermicelli
  • 60mls (1/4 cup) peanut oil
  • 2 eggs, lightly whisked
  • 1 medium brown onion, sliced
  • 200g pork mince
  • 2 garlic cloves, finely chopped
  • 1 large carrot, peeled, cut into sticks
  • 10 button mushrooms, sliced
  • 20.00 gm water
  • 1 bunch baby bok choy, washed, sliced
  • 60mls (1/4 cup) oyster sauce
  • 40.00 ml kecap manis (thick soy sauce)
Instructions:
  • Place the rice vermicelli in a heatproof bowl and cover with boiling water. Let sit for 10 minutes until tender, then drain.
  • Heat 2 teaspoons of peanut oil in a wok or large frying pan over medium heat. Pour in the whisked eggs, swirl the pan to create an omelette, and cook for 1 minute until it sets. Remove, chop roughly, and set aside for garnish.
  • In a heated wok or pan over medium-high heat, sauté the onion in the remaining peanut oil until beginning to soften. Add the pork mince and brown it. Then, add the garlic, carrot, mushrooms, and water, and stir-fry over high heat until the vegetables start to soften.
  • Add the bok choy, rice vermicelli, oyster sauce, and kecap manis to the pan. Cook covered over medium heat for 3 minutes, stirring occasionally until everything is heated through.
  • Top the dish with the finely chopped omelette for a delightful presentation.
