Classic Filipino pancit bihon: stir-fried rice noodles with veggies, pork, and savory sauce. Perfect for any occasion, simple enough for weeknights.
Ingredients:
  • For the pork
  • 1/2 pound boneless pork belly or pork shoulder, whole slab
  • 3 cups water, for boiling the pork
  • 1 pinch salt
  • 1/4 teaspoon ground black pepper
  • For the stir-fry
  • 8 ounces dried pancit bihon noodles
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 medium white or yellow onion, chopped
  • 1 large stalk celery, chopped
  • 2 green onions, chopped, white and green parts divided
  • 1 tablespoon patis (fish sauce)
  • 1 medium carrot, peeled and julienned
  • 2 cups green beans, edges trimmed, sliced into 1-inch pieces
  • 3 cups shredded green cabbage
  • 1 1/2 cups broth, from cooking the pork
  • 2 tablespoons toyo (soy sauce)
  • 1 tablespoon calamansi juice (or lemon juice)
  • For serving
  • 1/4 cup patis ( fish sauce )
Instructions:
  • Prepare the pork: Trim excess fat from the pork using a sharp knife. In a medium stockpot, cover pork with water, sprinkle with salt and pepper. Simmer, covered, for 45 minutes until tender. Reserve 1 1/2 cups of broth for later. Let pork rest for 10-15 minutes before slicing into 1/2-inch cubes.
  • Soften the bihon noodles by placing them in a large bowl and gently sprinkling water over them until they are soft and pliable, without becoming mushy. Set aside.
  • For a delicious stir fry: Heat oil in a wok or large skillet over medium heat. Sauté garlic, onion, celery, and white parts of green onion until soft and fragrant, about 2 minutes. Stir in patis (fish sauce), then add carrot and green beans. Cook until veggies begin to soften. Finally, add shredded cabbage and toss to combine.
  • Combine the sliced, cooked pork with 1 1/2 cups of reserved pork broth, toyo (soy sauce), and calamansi juice. Mix well and add the damp bihon noodles. Cook with the lid on until noodles soften and absorb the flavors, about 8 to 10 minutes.
  • Enhance flavors and plate: Season with salt and pepper to taste, sprinkle with green onion tops, and enjoy while warm with a tangy dipping sauce of patis and calamansi juice. For best results, enjoy promptly after cooking. Store leftovers in the refrigerator in a covered container for up to a day, and reheat in the microwave or on the stovetop as needed.
