Delicious chicken pancit with cabbage, carrots, and rice noodles in soy sauce.
Ingredients:
  • 1 (12 ounce) package dried rice noodles
  • 1 teaspoon vegetable oil
  • 1 onion, finely diced
  • 3 cloves garlic, minced
  • 2 cups diced cooked chicken breast meat
  • 1 small head cabbage, thinly sliced
  • 4 carrot, thinly sliced
  • 0.25 cup soy sauce
  • 2 lemons - cut into wedges, for garnish
Instructions:
  • Organize all the ingredients.
  • In a large bowl, immerse the rice noodles in warm water and allow them to soften for 8 to 10 minutes. Drain and set aside.
  • Heat oil in a wok over medium-low heat, cook onion and garlic until tender, then add chicken, cabbage, carrots, and soy sauce. Cook until cabbage softens slightly.
  • Add the noodles and stir consistently until warmed.
  • Transfer the deliciously cooked pancit to a beautiful serving dish and elegantly garnish it with refreshing lemon wedges.
