Green beans sautéed with shallots and crispy pancetta for a simple and flavorful dish.
Ingredients:
  • 1 pound green beans, ends trimmed, strings removed (if any)
  • Kosher salt
  • 2 ounces pancetta, diced very small
  • 2 to 3 large shallots, chopped
  • 2 teaspoons butter
  • Freshly ground black pepper
Instructions:
  • Prepare the green beans: quickly blanch them in a pot of boiling salted water for 4 minutes, or until they are tender-crisp.
  • Shock the beans by transferring them to a bowl of ice water to halt the cooking process. Drain once more and set aside. (For advanced preparation, refrigerate the beans for up to one day.)
  • Crisp up the pancetta: In a large sauté pan over medium-high heat, cook the diced pancetta, stirring occasionally, until golden brown, about 2 to 3 minutes. Transfer the crispy pancetta to a plate using a slotted spoon.
  • Introduce the shallots: Throw the shallots into the pan and sauté in the flavorful pancetta fat on medium-high heat until they develop a golden hue, stirring occasionally.
  • Melt butter in a pan, then toss in drained green beans and pancetta. Season with salt and pepper to your liking. Keep stirring until the beans are hot and coated in the flavorful mix. Serve right away.
