Elevate green beans with gourmet flair using blue cheese and bacon for a simple yet decadent side dish.
Ingredients:
  • 1 lb fresh green beans, trimmed
  • 4 slices bacon
  • 2 shallots, sliced
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/8 teaspoon ground red pepper (cayenne)
  • 1/3 cup crumbled blue cheese
Instructions:
  • In a large saucepan, bring 2 quarts (8 cups) of water to a boil. Add green beans and cook for about 5 minutes until crisp-tender. Remove green beans from boiling water and quickly transfer to a bowl of ice water to chill. Drain before serving.
  • Cook bacon in a 12-inch skillet until crisp, then drain on paper towels. Crumble the bacon and set aside, reserving 1 tablespoon of bacon drippings in the skillet.
  • In the same pan with the bacon drippings, sauté shallots until tender. Stir in green beans, salt, black pepper and red pepper, cook for 2 to 3 minutes until everything is heated through, stirring often.
  • Transfer the flavorful bean mixture into a serving dish and generously top it with cheese and crispy crumbled bacon.
