Sauteed green beans and fennel tossed in olive oil with basil and feta cheese for a vibrant and flavorful dish.
Ingredients:
  • 1 pound fresh green beans, trimmed
  • 1 fennel bulb, cut into thin slices
  • 0.25 cup extra-virgin olive oil
  • 2 tablespoons chopped fresh basil leaves
  • 0.25 cup crumbled feta cheese
Instructions:
  • Fill a saucepan halfway with water and bring it to a boil. Add the green beans and fennel slices and cook for about 4 minutes until they are just starting to become tender. Drain in a colander and rinse under cold water to halt the cooking.
  • Place the empty pan back on the stove over medium heat. Add the olive oil and let it heat for a minute. Add back the green beans and fennel. Season with basil, salt, and pepper, stirring until coated and heated through. Transfer to a serving dish and mix in feta cheese.
