Sea Bass with Green Beans

Fresh green beans stir-fried with mild sea bass, sesame oil, and ginger.
Ingredients:
  • 1 sea bass or walleye fillet (1/2 pound)
  • 1 teaspoon cornstarch
  • 1 teaspoon sesame oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon finely chopped gingerroot
  • 1/8 teaspoon white pepper
  • 10 ounces green beans
  • 1 green onion
  • 1 tablespoon cornstarch
  • 1 tablespoon water
  • 1 teaspoon sugar
  • 1/4 teaspoon sesame oil
  • 1/4 cup vegetable oil
  • 1 teaspoon finely chopped garlic clove
  • 1/2 cup Progresso™ chicken broth (from 32-ounce carton)
Instructions:
  • Gently pat dry the fish with paper towels. Slice the fish into 2x1/2-inch pieces. Combine the fish with cornstarch, sesame oil, salt, gingerroot, and white pepper in a glass or plastic bowl. Cover and refrigerate for 20 minutes.
  • Snap green beans in half for a satisfying crunch. Diagonally slice onion into 1-inch pieces. Combine 1 tablespoon of cornstarch with water. Blend sugar with 1/4 teaspoon of sesame oil for a touch of sweetness.
  • Heat a wok or a 10-inch skillet over medium-high heat. Add 2 tablespoons of vegetable oil, swirling to coat the sides. Stir-fry the fish gently for about 2 minutes until it turns white, then remove it from the wok.
  • Pour the remaining 2 tablespoons of vegetable oil into the wok and swirl it around to coat the sides. Toss in the green beans, garlic, and 1/2 teaspoon of salt, then stir-fry for 1 minute. Pour in the broth and bring it to a boil. Cover the wok and let it cook for 2 minutes.
  • Combine the cornstarch mixture and stir until thickened. Add fish and onion, and cook gently for about 30 seconds until fish is heated. Finally, gently incorporate the sugar mixture.
