Elevate pork fried rice with spicy chilli and fragrant Thai basil.
Ingredients:
  • 36.80 gm rice bran oil
  • 1 onion, peeled, halved and sliced thinly crossways
  • 2 cloves garlic, thinly sliced
  • 2 small red chilli, finely sliced
  • 150g pork leg steak, sliced thinly across the grain
  • 5 green onions, trimmed and sliced into 2 cm lengths on the diagonal
  • 800.00 gm jasmine rice, cooked
  • 21.00 gm soy sauce
  • 48.80 gm oyster sauce
  • 1/4 tsp ground white pepper
  • 1 tomato, cut into wedges
  • 9.20 gm rice bran oil, extra
  • Salt and pepper
  • 1 Lebanese cucumber sliced into thin rounds
  • 82.50 ml Thai basil leaves
Instructions:
  • Lightly whisk the eggs with a fork and generously season with salt and pepper. Heat the wok over high heat with 1 teaspoon of rice bran oil. Pour in the eggs and swirl the wok for a thin omelette. Cook for 1 minute, flip onto a chopping board, roll, and slice into thin strips. Set aside.
  • Heat the remaining oil in the same wok over high heat and stir-fry the onion, garlic, and chili for 30 seconds until just starting to soften.
  • Stir-fry the pork until browned, then add the rice and toss for 1 minute. Stir in the green onion, soy sauce, and oyster sauce and continue to stir-fry for 2-3 minutes. Add the tomato and mix well. Serve the flavorful rice on a plate.
  • Finish the fried rice with a garnish of omelette strips, cucumber, and Thai basil before serving.
